Moreover, a catalyst is a substance which can speed up or alter the rate of chemical reaction without being chemically changed. Pineapples contain one specific enzyme called Bromelain, and it is measured in GDU “Gelatin Digesting System Units.” As a fact, fresh pineapple juice can´t be used in gelatin because the fruit´s enzymes will eat the protein´s gelatin and it will not jell; therefore, boiling the fruit helps in the process of making this dessert because it denatures enzyme activity.
