1 large onion, halved
2 bay leaves
4 tablespoons fresh coriander
1⁄2 teaspoon ground cumin
salt and black pepper
400 g/14 oz red potatoes (such as Desirée), peeled and diced
400 g/14 oz floury potatoes (such as King Edwards), peeled and
diced
12 small new potatoes, cleaned and halved
4 corn on the cob, halved
8 tablespoons double cream
4 teaspoons drained capers
1 avocado, peeled and thinly sliced
Instructions
1.
The chicken, water and milk are placed in a large saucepan and
brought to the boil over a high heat.

The surface of any scum is skimmed then the onion, bay leaves,
coriander, cumin, salt and pepper are added.
They are mixed well
then the heat is reduced, covered and simmered for 30 - 35
minutes or until the chicken is tender.
Less
